PINEAPPLE-KEY LIMEADE

 

1 cup sugar

2 1/2 cups water

1 cup pineapple juice

3 cups fresh pineapple chunks

1 1/2 tbs. chopped crystallized ginger

1 vanilla bean, split lengthwise

1/4 cup FLORIDA KEY WEST KEY LIME JUICE

2 tbs. Grenadine

 

Stir together sugar, water, ginger and vanilla in small saucepan to dissolve sugar.  Bring to boiling; boil 1-minute.  Remove from heat; cover and let stand 30 minutes.

 

Combine pineapple juice,  pineapple, lime juice and grenadine in blender and whirl until smooth.  Strain sugar syrup and discard solids.  Add sugar syrup to pineapple mixture in blender; whirl until combined.  Stir mixtures together.  Cover and refrigerate until chilled.  Serve over ice cubes.  Makes 8 servings (6 cups).

 

 

RUM PUNCH

 

3 cups unsweetened pineapple juice

1/2 cup FLORIDA KEY WEST KEY LIME JUICE

2 cups orange juice

1 cup dark rum

1-1/2 cup Grenadine

 

 

Combine juices, rum, grenadine and serve.  (For a layered effect, mix all ingredients except the grenadine and pour into glasses, then add 2 to 3 tablespoons grenadine to each glass.  the grenadine will sink to the bottom of the glass; juices will float on top.)  Makes 8 servings.
