SAUSAGE & WHITE BEAN DIP

1 pkg. roll sausage, cooked, drained and crumbled |
2 tsp. FLORIDA KEY WEST KEY LIME JUICE |

1 head garlic |
1/2 tsp. Salt |
|
1/2 cup olive oil |
1/4 tsp. pepper |
|
2-15 oz. cans small white beans, drained and rinsed |
Garnish: chopped scallions, Tomatoes, olives |

1/2 cup dried thyme |
|
Slice off top of garlic head, exposing cloves. Wrap in foil and bake at 350o for 40 minutes or until cloves are very soft. Squeeze cloves out of skin into food processor bowl. Add 1 can white beans and olive oil; puree until smooth. Add remaining ingredients; blend well. Garnish. Serve at room temperature with tortilla chips or crackers. Makes 4 cups.

2 to 3 oz. FLORIDA KEY WEST KEY LIME JUICE |
1 tsp. Jamaican hot sauce 6 to 8 large flour tortillas |

8 oz. cream cheese |
Avocado Slices |

1 tbs. each, finely chopped basil, garlic chives, salad burnett and arugula |
Colby, Muenster or Monterey Jack cheese |
Combine lime juice, cream cheese, herbs and hot sauce in a food processor. Process until smooth.
Spread the mixture thinly on the tortillas. Place avocado slice down center of each tortilla. Sprinkle each tortilla with about 2 tablespoons shredded cheese. Broil tortillas just until cheese begins to melt. Remove from broiler and roll tightly. Place in resealable plastic bag and refrigerate up to 24 hours. When ready to serve, cut into 1/2-inch slices.
Note: Recipe can be varied using cilantro, ham, turkey, black bean dip and/or green onions.
