ALMOND FINGER SANDWICHES  

 

1 tbs. FLORIDA KEY WEST KEY LIME JUICE

4 oz. cream cheese

1/8 lb. salted almonds

1 loaf wheat bread (buttered)

 

 

Mix the cream cheese and lemon juice to a smooth paste.  Chop almonds and add to paste.  Spread between buttered bread.  Cut into fingers.

 

 

CLAM DIP

           

2 tbs. FLORIDA KEY WEST KEY LIME JUICE

8-oz. cream cheese, softened

16-oz. sour cream

16-oz. minced clams

4 tbs. A-1 Sauce

garlic salt to taste

 

 

Soften cream cheese by leaving out or by 5 seconds in microwave.  Mix cream cheese, sour cream and minced clams (drained).  Add rest of ingredients and serve.  Serve with potato chips.

 

 

KEY LIME-CRAB SPREAD

 

1 lb. Imitation crabmeat (may also use crabmeat, smoked fish, salmon or any cooked white fish)

2 tsp. FLORIDA KEY WEST KEY LIME JUICE

1 cup nonfat sour cream

1/4 cup finely chopped chives

1/2 tsp. garlic powder

1/4 cup light mayonnaise

1/2 tsp. Salt

 

Separate crabmeat or fish until finely shredded.  In medium bowl combine remaining ingredients. (start with 1/4 c. mayo; add more for desired consistency.)   Add crabmeat, mix; chill.  Serve with low-fat crackers.  Yield approximately 3 cups.
